A new consortium of fresh pasta producers, ‘Consorzio volontario per la tutela del Cappelletto di Tolentino’, has been created in Tolentino, in the Marche region of Italy.
The four companies involved, Pastificio Pavoni, PastItalia, Casa del Tortellino and …In Pasta, have signed up to regulations governing matter such as the ingredients used in pasta, its thickness, the quality of stuffing, and the absence of absence of preservatives and colourants.
Made in Tolentino
Brands associated with the consortium can use ‘Made in Tolentino’ branding on their packaging. Graphic designer Studio KBrush has created a recognisable brand which presents the lunar phases of Tolentino’s bell tower, as well as four stars which indicate the four founding members.
The main purpose of the consortium is to raise awareness of the art of ‘Mastri Pastai’, the method in which fresh egg pasta has been produced in the region for generations.
The official presentation of the consortium took place during a press conference hosted by Tolentino mayor Giuseppe Pezzanesi and the four founding companies.
