The picking is done by hand and during the night, a difficult and time consuming process necessary to guarantee Cava's quality and characteristics.
According to Xavier Farré, viticulture director at Raimat, this season is expected to be excellent both in quantity and quality. This is contributed to a mild summer, slow ripening and moderate stress on the vines.
The company, owned by the Codorniú-Raventos Group, provides 900 jobs, and it claims to be Spain's oldest family-run business in the country and the 17th in the world.
