In a move to tackle food wastage, Interspar bakery in Austria has introduced an organic beer - Young & Urban - brewed from excess bread.
The retailer tied up with the Gusswerk brewery in Salzburg to manufacture the beer, which uses organic bread and grain rolls that are produced in surplus.
Brewmaster from Gusswerk, Reinhold Barta, said, “The Interspar bakery is the largest craft bakery in the Austrian food trade. As such, it often produces an excess of baked goods.
“To reduce waste, the innovative idea was born to utilise the surplus bread to brew an amber-coloured organic bread beer.”
Bread Beer - A Challenge
The beer is available in Spar, Eurospar and Interspar outlets across Austria
The barley and malt content in this naturally cloudy, organic beer has been replaced by other organic, baked components.
Barta added, “Brewing full-bodied bread beer is a challenge, with the salt content of the bread affecting the beer.
"The bread crust creates a slight caramel note, which gives the beer its characteristic taste.”
Beer and bread share the same basic ingredients such as yeast, grains, and water.
