Bread consumption in Italy has practically halved in the last 10 years, reaching a record low of just 85 grams per head daily, according to research by farmers association Coldiretti, in association with Censis.
The study found that this negative trend has accelerated in recent years. Daily bread consumption in 2010 was 120 grams per person, compare to 180 grams in 2000. 197 grams in 1990 and 230 grams in 1980.
In addition, almost half of Italians (46%) eat the leftover bread from the day before, with a growing positive trend of waste reduction.
As well as a drop in consumption, there has also been increased interest in organic bread and new gluten-free products, as well as products that are alternative to wheat grain.
