The Italian Association of the Sweet and Pasta Industries, AIDEPI, has warned of a potential shortage of butter, a key ingredient for the confectionery industry.
The problem impacts the manufacturing of products such as panettone, pandoro and colomba, which require the use of butter as a fundamental, non-replaceable ingredient.
Supply Problems
In recent months, following the EU's decision to limit milk production, Europe has seen a decline in the supply of dairy products.
AIDEPI says that this has impacted the market, with butter prices increasing by 10% in the last month, according to the latest data from the EU Commission.
As a result, the association has warned that the continuity of confectionary production cannot be guaranteed.
AIDEPI director Mario Piccialuti pointed out that companies in the sector account for an annual turnover of more than €8 billion and employ over 40,000 people in Italy. He appealed to the authorities “for prompt intervention aimed at rebalancing the dynamics of butter procurement”.
