Sweden's dairy industry is struggling to meet the demand for butter by consumers. With supply running low in supermarkets for the second month running, the latest cooking trends and full-fat diets are being held responsible for the butter shortage.
With people going back to basics in their cooking, consumers are choosing full-fat products over the low-fat alternatives when doing their weekly shopping. Low-carbohydrates, high-fat diets are also praising the benefits of using real butter over margarine and other products. Demand for butter and cream has risen while production has been declining for the last few years, said Claes Henriksson from the Arla diary in Sweden. With fewer dairy farmers producing butter in Sweden, cream is being imported from Denmark for use in other dairy products in order to free up Swedish cream for the production of butter. Supermarkets across the country are putting up notices to explain the supply situation to customers.
It is expected that the butter industry will return to normal in the next month. (3 Oct)
